There are three million bottles of the 2014 Verdejo, which is bottled throughout the year until the next vintage arrives. It's pure, fruit-driven and straightforward Verdejo with notes of white flowers and freshly cut grass, quite typical from the variety. 90% of it is machine-harvested at night while the rest is hand picked from head-pruned old vineyards in the zone of La Seca. There is some cold soak, and fermentation is with neutral yeasts in inox at low temperature. The palate has more volume, as the wine is kept in contact with the lees no less than two months, and the lees are stirred with nitrogen (for volumes like this there is a need to use technology for most of the steps); the flavors are clean and fresh, and there's good acidity. It is slightly reductive at first; open and decant in advance.
